‘WOW’ your guests with sous vide, teppanyaki & fanned gas appliances
Sous vide, teppanyaki & fanned gas appliances would never have been seen outside a professional kitchen 5 years ago. However, things are starting to change & these appliances are starting to make their way into domestic kitchens.
Sous vide appliances
Sous vide, from the French word “under vacuum”, is a method of cooking food in sealed airtight bags in a water bath for much longer than normal, sometimes for up to 3 days. Sous vide cooks at a much lower temperature than normal, usually between 55 °C (131 °F) to 60 °C (140 °F). The benefit of sous vide is it’s said to cook food much more evenly & maintain more of the foods natural moisture.
German appliance brand Komet is one of the first manufacturers to have introduced a sous vide appliance to the UK market. It’s VacuFresh (pictured below) is not only capable of sous vide cooking, but is also able to reseal jars to preserve their freshness.
Teppanyaki grills
Teppanyaki is a Japanese style of cooking that uses an iron griddle to cook food very quickly at extremely high temperatures. Originally teppanyaki grills were only available to buy separately & relied on the user having to place it on the hob. However, as this style of cooking has gained in popularity, teppanyaki griddles are now starting to be found on large range cookers.
The big draw for consumers of teppanyaki grills is their shear flexibility. They can be used for everything from Asian style cooking to full English breakfasts to French crepes & pancakes.

Fanned gas
Another new technology starting to find it’s way into appliances is fanned gas. Many people still maintain that gas cooking retains far more of the foods moisture than cooking with electric. However, the biggest downside of a gas oven is it will never cook as evenly as an electric fan oven due to fluctuations in temperatures around the oven. This problem is said to have been overcome with fanned gas. Fanned gas ovens combine a conventional gas oven with an electric fan. The fan draws in & distributes air around the oven to produce even temperatures at all levels. Fanned gas ovens are able to reduce the temperature variance to just 5 degrees compared to 19 degrees on a standard gas oven.
